Ingredients:

 

  • 4 large bell peppers (red, yellow, or green)
  • 500 grams ground beef or ground turkey
  • 250 grams cooked rice
  • 240 ml tomato sauce
  • 125 grams diced onions
  • 125 grams diced tomatoes
  • 125 grams diced mushrooms
  • 125 grams corn kernels (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 250 grams shredded cheese (cheddar, mozzarella, or your favorite cheese)

Instructions:

1. Prepare the Bell Peppers:

  • Start by washing the bell peppers and cutting the tops off. Remove the seeds and membranes from the inside to create a hollow space for the stuffing.

 

2. Parboil the Peppers:

  • In a large pot of boiling water, blanch the peppers for about 3-4 minutes until they slightly soften. Then, remove them and place them upside down on a paper towel to drain.

 

3. Make the Filling:

  • In a skillet, heat olive oil over medium heat. Add diced onions and garlic, and sauté until they become translucent.
  • Add ground beef or turkey and cook until browned, breaking it up into small pieces with a spatula.
  • Stir in diced tomatoes, mushrooms, and corn (if using). Cook for a few minutes until they soften.
  • Mix in the cooked rice, oregano, paprika, and half of the tomato sauce. Season with salt and pepper to taste.

 

4. Stuff the Peppers:

  • Carefully stuff each bell pepper with the meat and rice mixture, pressing it down gently.
  • Place the stuffed peppers in a baking dish and pour the remaining tomato sauce over the top.

 

5. Bake and Add Cheese:

  • Preheat your oven to 175°C. Cover the baking dish with aluminum foil and bake the stuffed peppers for about 25-30 minutes.
  • Remove the foil, sprinkle the shredded cheese over the stuffed peppers, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the peppers are tender.

 

6. Serve and Enjoy:

  • Carefully remove the stuffed peppers from the oven and let them cool for a few minutes.
